There might be some confusion here, are you talking about Carbonio or Carbonio CE? I'm asking because you're referring to Carbonio documentation while the same article in Carbonio CE documentation can be found here: https://docs.zextras.com/carbonio-ce/html/_management/custom.html

In the Zextras documentation hub website, you can see the full documentation for both products.

      Unable to find the guideline for changing/customizing logo, can you assist or provide the sample.

Well if you're using Carbonio CE, currently this functionality (changing/customizing logo) is not supported that's why you see the procedures only in Carbonio documentation and not Carbonio CE.
