I set up my Ubuntu 24.04 server with Carbonio CE 25.12.0, all on a fresh, clean installation. This is on a test server; I want to test before migrating my Zimbra mail server.
The specifications are:

This is running under VMware 6.7 virtualization.
However, the following behavior concerns me for a potential production move:

RAM usage is progressive. After a server reboot, I notice it consumes about 7.5 GB, and gradually, more RAM gets used. I left it last Friday, and today when I checked, it had reached ~11 GB. I rebooted it, and it went back to 7.5 GB, but it slowly consumes more and more RAM over time.

Periodically, I get an error preventing web access due to an issue. This is a recurring problem; I cannot log in via either a normal user account or the admin panel. On the server itself, all services are running normally.
For the installation, I used the existing guide in the documentation. I only have two mailboxes I created myself (zextras and a test one), plus the system mailboxes which remain.
Is this normal?

It is hard to say at this point. I would suggest you to get the accounts and distribution lists without their data from Zimbra to Carbonio CE. Test some regular interaction and transaction of emails to see if the services and responses are optimal.
I did not start any migration, just testing mailboxes and Carbonio workflow, but somehow, it is still increasing memory consumption. I added 2 inboxes, and memory goes like 11 GB consumption, I restart the server, memory starts at 8GB, and slowly, starts RAM consumption, is it norma?
I would say this is normal. You can only troubleshoot if you notice inconsistency.
